Collins Dictonary definition says masculine noun. 1. ( Andes) (Cookery) slice of fried banana.
The name patacón comes from various Colonial Era Spanish and Portuguese silver coins. Patacones are one of those perfect snacks, especially on a sunny day – so everyday here in gorgeous Costa Rica – they can be eaten alone, with dipping sauces and also as sides for ceviches, seafood dishes, chifrijo or pretty much anything.
What’s not to like…we asked local Guanacaste Chef, Llayro Sevilla at the Reserva Conchal Beach Club on the best way to prepare and cook these small yellow discs of deliciousness – to make the perfect patacones at home – follow the directions below:
* 4 x Green Plantains (do not use yellow or yellowish as it will change the taste).
* Vegetable Oil
Step 1: Choose and peel green plantains
Step 2: Heat 1 inch of vegetable oil on medium heat until hot
Step 3: Cut it width wise into 3 or 4 pieces
Step 4: Fry plantain pieces on both sides for about 3 minutes, or until the pieces are golden
Step 5: When they are golden, remove from pan and place onto a plate covered with a paper towel
Step 6: Flatten the fried plantain. Place the pieces one at a time between 2 pieces of waxed paper and flatten with your hands. Be careful not to put too much pressure, or the plantain will stick to the waxed paper. Gently flatten them till they are about 1/4″ thick.
Step 7: Place in the hot oil again and fry until both sides are golden brown.
Step 8: Drain on paper towel covered plate (be sure to change paper towels in between the 2 fryings) and sprinkle with salt.
